NEW MOON is a single-distilled espadín capon that can be enjoyed pure or as a base for various cocktails. The agave distillate is crafted by Refugia Cortes Ramos & family in their traditional palenque in La Pila, Miahuatlán, Oaxaca. The agave plants used were harvested just before flowering - called espadín capon - which contributes to an inherent sweetness in the taste. The agave hearts are cooked in an earth oven, chopped and naturally fermented in oak wood barrels. NEW MOON is then single-distilled in a large copper pot-still with double cooling (alambique de cobre con refrescadera), so that the flavor of the plant is preserved in the best possible way.
