The Guajillo Chile, is one of the more popular dried red chiles in Mexico, perfect for adding authentic flavor and color to salsas, chili, stews, soups and spice rubs for meat. The dried form of Mirasol chiles, Guajillo Chiles are 10- to 15-cm long with a reddish-brown color and leathery, smooth skin. They have relatively mild heat with a smoky-sweet flavor that hints of berries. A combination of Guajillo and other chiles adds unique flavor to many Mexican dishes, including tamales and moles.
