An exquisite natural food coloring and flavoring used in many Mexican dishes such as al pastor and pibil! It's derived from the annatto seed.

While, in some countries, achiote is exclusively annatto, Mexican achiote is a condiment, adding spices such as cumin, pepper, coriander, oregano, cloves, and garlic.
